Simple Berry Parfait (Dairy-Free)

I can’t believe it is already July! Since 4th of July really crept up on me this year,  I wanted to create a recipe for the occasion that would be super simple, but incredibly delicious. These parfaits were the perfect solution! So, if you’re terrible at planning for holidays like I am, you have got to try these.

 

These puppies take about 5 minutes to make, which is ideal if you would rather spend your holiday outside having fun, than in the sweltering kitchen! However, nobody will know they are so easy to make, because they are elegant and festive.

In this recipe, we use coconut whipped cream instead of whipped cream for a yummy dairy-free alternative. To make the coconut whipped cream, it’s ideal to refrigerate your cans of full-fat coconut milk (I love the 365 brand) overnight, so the cream is easier to scoop off the top. Also, make sure you’re using full-fat coconut milk cans. Fat is good for our bodies and it makes for the best whipped cream!

Simple Berry Parfait

Dairy-free, Paleo, no added sugar


Ingredients

Scale
  • Cream from 2 cans full-fat coconut milk*
  • 1 tsp vanilla extract
  • 5 drops monkfruit extract or stevia (optional)
  • 1 pint organic raspberries
  • 1 pint organic blackberries

Instructions

  1. Scoop the coconut cream into a large bowl and whip it with an electric mixer for a minute or two, or until soft peaks form. Whip in the vanilla and monkfruit until stiff peaks form.
  2. Slightly mash your raspberries and blackberries in separate bowls.
  3. Scoop raspberries into the bottom of 3 small glasses or jars. Top with coconut whipped cream. Place blackberries on top, then finish with a dollop of cream.
  4. Serve cold and enjoy!

Notes

  • *Refrigerate your coconut milk cans for a few hours-overnight so the thick cream is easy to scoop off the top of the can. Discard the liquid at the bottom.
