Magical Unicorn Dream Frappuccino

Ok, ok. Where to start on this one? My mind is blown by this amazingness. It’s a {healthy} UNICORN SMOOTHIE. How did this all begin? Let me tell you…

As you may know, Starbucks released a drink in April that popped with bright pink and blue. They called it a Unicorn Frappuccino and it was so exciting! The downfall? It contained 59 grams of sugar. Um, no thanks!! The saddest part was that Starbucks marketed the sugar-laden smoothie towards kids. But who wants to feed their kids 59 grams of sugar in one drink?!

 

 

 

 

 

 

 

 

 

 

Well, obviously I wanted to have a unicorn frap (after all, I am a kid!) but I surely didn’t want to eat all that sugar and artificial color. So, I decided to create my own, but wholegirl-ified. This one is actually healthy(!) AND it looks exactly like the Starbucks version!

 

My vibrant colors come from whole dragon fruit, which is high in magnesium, fiber and antioxidants, and blue spirulina, which supports healthy joints and cellular protection. Sounds like a lot of health benefits for such a stunning drink, right?!

 

 

This treat is great for kids because they will be so excited to eat a bright pink and blue smoothie! Little will they know that it’s actually full of veggies, fruits, and protein. When I made this drink I kept it really low-sugar; the only sweetener I used was from the dragon fruit. However, if you and your kiddos like a sweeter drink, feel free to add half a banana to the drink and a little honey to the drizzle.  I used my favorite collagen in this for 20 grams of protein  (use this link and code GROK15 at checkout for 15% off!), but you can use any vanilla protein powder for a vegan option.

Description

A copycat Starbucks Unicorn Frappuccino- without the 59 grams of sugar and artificial everything! This one is Paleo, vegan-friendly, and healthy.


Ingredients

Scale

Smoothie

  • 1 pack frozen dragon fruit (I used Pitaya Plus)
  • 3/4 cup frozen cauliflower
  • ¼ avocado
  • ½ cup almond milk (or use filtered water for a brighter color)
  • 1 serving vanilla protein powder (I used Primal Kitchen vanilla-coconut collagen)
  • ½ frozen banana (optional, omit for low-sugar)

Blue drizzle

  • Tbs coconut cream*
  • 1 scoop E3 live blue majik (or other blue spirulina powder)
  • 1 tsp raw honey (optional, omit for low-sugar)
  • Cream topping
  • 3 Tbs coconut cream*

Instructions

  1. Using a high-speed blender, blend together all the smoothie ingredients until smooth (use your tamper for this one because it’s gonna be thick!).
  2. In a small dish, stir together the coconut cream and spirulina until smooth. Scoop into a small plastic baggie, and cut the tip off the bag. Get a large milkshake glass (or two small ones) and drizzle the blue coconut cream on the inside of the glass, in a zigzag design.
  3. Pour the pink smoothie into the glass(es). Gently, top with the remaining 3 Tbs coconut cream. Serve the delicious, healthy frappuccinos and enjoy!

Notes

  • How to get the coconut cream: leave a can of full-fat coconut milk out at room temperature. You don’t want it cold for this! Scoop the creamy, smooth, white stuff off the top of the can. Use this! You can whip it for the topping if you like, but I just left it as-is.
