Dark Chocolate Fudge Torte

Hello there, friends! Today I am writing you from Austin, Texas. Why am I all the way in Texas, you ask?? Well, later today I am doing a cooking demo at Paleo f(x), the world’s largest Paleo convention! Guess what I’m making… Dark Chocolate Fudge Torte. Yup, it’s just about the yummiest, most delightful dessert you can possibly make 🙂

 

Bonus: this torte is no-bake, takes 10 minutes to throw together, and requires only 6 ingredients!

 

It has a light, shortbread-tasting crust made out of three ingredients: almond flour, coconut oil, and maple syrup. The filling of the torte is rich, chocolate-y and sooo creamy. It’s comprised of cacao, coconut milk and oil, cashews and maple syrup. Oh, so simple!

 

My excitement levels are off the charts right now about demoing this recipe. But alas- not all of you can come see my demo. So, I’ve decided to share the recipe with you today so that you can make it at home! No plane ticket to Austin required 😉

Dark Chocolate Fudge Torte

Paleo, vegan, no-bake, raw option


Ingredients

Scale

Crust

  • 2 cups almond flour
  • 2 Tbs maple syrup
  • 4 Tbs coconut oil, softened

Filling

  • 1½ cups salted, roasted cashews
  • ¼ cup coconut oil, softened
  • 1 cup full-fat canned coconut milk
  • 3 Tbs maple syrup
  • ½ cup + 2 Tbs cacao powder

Instructions

  1. In a food processor, pulse together the crust ingredients until a dough forms. Press evenly into the bottom of a 9″ spring-form cake pan, greased with coconut oil. Freeze for 10 minutes.
  2. For the filing, place the cashews and coconut oil in your food processor. Blend until smooth. Add the milk, syrup and cacao. Pulse until completely smooth and creamy.
  3. Pour filling into the frozen crust. Cover lightly with tin foil and
  4. freeze the whole torte for 1 hour. When done, slice the torte and serve! Store any leftovers in an airtight container in the fridge.
