Apple Spice Cake

There’s just something about warm apples with cinnamon that makes my heart so happy! Maybe it’s because the combination means it is finally fall, or maybe it’s just because apples and cinnamon is the best flavor ever. EVER.

 

 

I’m usually a diehard chocolate person, but I think I love this cake way more than I’ve ever loved chocolate cake. I know, I know!! I’m sorry if I’ve offended you. But I had to let you know the truth. It was for your own good, I promise.

 

I am not lying when I say this cake is insane. Insanely moist, fluffy, warm, flavorful, and delightful. Imagine biting into a cinnamon- and nutmeg-filled cake and then hitting a bite of sweet, warm, crisp apple. Is there anything better??

 

 

One of the things I love most about this cake is that it’s suuuper healthy. Actually healthy. The only sugar comes from a tiny bit of apple sauce and fresh apple, and it’s full of protein from eggs and almond. I’m not saying I haven’t eaten this for breakfast the past few days…

 

The only issue with this cake is that it’s too delicious. Like, my family (me) ate it in only a few hours. So I seriously recommend doubling the batch to make two cakes 😉

Apple Spice Cake

Description

Sugar-free, grain-free, dairy-free. Full of warming spices and fall spirit!


Ingredients

Scale
  • 3 large eggs, room temp
  • ½ cup unsweetened apple sauce
  • ¼ cup melted coconut oil
  • 1 cup blanched almond flour
  • ¼ cup tapioca starch
  • 2 Tbs coconut flour
  • ¼ cup granulated Lakanto original monk fruit sweetener (or sub coconut sugar)
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ½ tsp nutmeg
  • ¼ tsp sea salt
  • 1 large Honey Crisp apple (or apple of choice)

Instructions

  1. Preheat oven to 350*F and line a 9” cake pan with parchment paper.
  2. In a medium bowl, whisk together the eggs, apple sauce, and coconut oil.
  3. In a large bowl, whisk together the dry ingredients.
  4. Whisk the wet into the dry and stir just until combined. Let the batter sit while you chop your apple.
  5. Chop 1/3 of the apple into 1cm chunks (should equal about 1/2 cup chopped apple). Cut the remaining apple into ½ cm thick slices (thin slices).
  6. Fold the apple chunks into the batter, then pour it into the cake tin.
  7. Arrange the slices apples on top and sprinkle with extra cinnamon.
  8. Bake cake for 30-33 minutes, then let cool for 10. Slice and enjoy!
