Grain-Free Adventure Bread

This bread is iconic. The star of the show. The bread to end all breads.

 

 

It shouldn’t even be called a bread, because it’s more like a bunch of seeds held together to resemble bread😆. Yet, it holds up incredibly well in sandwiches, toast, and anything you’d use bread for!

 

The best part? It’s absolutely free of grains, dairy, gluten, nuts, eggs, yeast, sugar, etc. What is it full of? DELICIOUSNESS! This “bread” is super nutty and full of flavor, and has the best texture: dense and crunchy.

 

 

It requires no yeast that has to rise, or any of that stuff. It’s just a mixture of a bunch of awesome superfoods. Once you’ve made the “dough,” it has to set for a few hours, bake for a while, and cool for a few hours. So, though the process is long, it is NOT labor-intensive at all. In fact, the total prep time is probably only fifteen minutes!

Paleo, vegan, nut-free, easy homemade seed bread


Ingredients

Scale
  • 2 cups roughly chopped coconut flakes, toasted
  • 1 cup roasted shelled sunflower seeds
  • 1/2 cup roasted shelled pumpkin seeds
  • 1/2 cup whole roasted flax seeds
  • 1/4 cup hemp seeds
  • 3 Tbs psyllium husk powder
  • 2 Tbs chia seeds
  • 1 tsp sea salt
  • 4 drops monk fruit extract, optional
  • 3 Tbs melted coconut oil
  • 13/4 cups water

Instructions

  1. In a large bowl, mix together the dry ingredients, then stir in the wet with your hands until it’s all thick.
  2. Cover the bowl of “dough” and let it sit on the counter for at least 2 hours, or overnight.
  3. Preheat your oven to 375°F and line a loaf pan with parchment paper. Scoop the dough into the pan and smooth it out.
  4. Bake the bread for 50 minutes, then turn your oven temp down to 300°F & let it bake for 15 more minutes.
  5. Let the bread cool completely on a wire rack before slicing. When ready to slice, make thin slices. You can toast it or not toast it! Store covered in a dish towel on the counter.
