Last weekend I had the amazing opportunity to give a cooking demonstration at Paleo f(x) in Austin, Texas!!!! Why all the exclamation marks, you ask? Because it was amazing. Like, best-weekend-of-my-life amazing. Paleo f(x) is the world’s largest Paleo convention. It is filled with the Paleo world’s most influential speakers, and the hottest Paleo foods on the market. Not only did I get to meet my greatest idols over the weekend, but I also had the amazing experience of doing a cooking demo in front of a live audience! I’ve attached my cooking demo below for you to watch 🙂 And thank you to my amazing Mother, who took all these pictures and explored Austin with me!
The most exciting part of my Paleo f(x) experience was meeting my friend Heather Resler, of Cook It Up Paleo, for the first time in person! She is the kindest girl, as well as being an amazing food blogger and allergy-free chef. We had so much fun walking around the convention together and talking about all things food!
We even got to have lunch at Picnik Austin, which I’d always wanted to go to. (That pic is of me and Heather at Picnik.) Later on I met Picnik’s owner, Naomi. She is so kind, and we instantly hit it off!
Heather and I were lucky enough to meet the amazing Mary, AKA the Paleo Chef! Sweetest, funniest woman evah. (That’s Mary, Heather and me above.)
At the convention, I was star-struck the whole time. I mean- getting to talk to the real Jill, of Jilz Crackers?! Incredible. Below is one of my greatest inspirations, Michelle Tam. Her blog was one of my first introductions to paleo! It was so cool to meet her in person.
Below is the lovely Leslie Klenke, author of Paleo Girl, which I can’t wait to read. It was such a delightful surprise to find out that we live only a few minutes away from each other!
Wha, whaaaaa? Diane and Mark in the same photo? No way, Jose! But yes, it’s real! These two gave me such great advice about blogging and cookbook-writing, and it was such a treat to chat with them.
Next is my favorite photo of all time; Heather and I being our normal, cave women selves. Don’t we look like sisters?! Everyone seemed to think so 🙂
One of my most favorite paleo products has got to be Eating Evolved. Their coconut butter cups, chocolate bars and chocolate spreads are insanely good. And it was so fun to meet the Co-Founder, Rick!
Now, for the amazing Chocolate Avocado Mousse recipe that I made for my Paleo f(x) cooking demo. It is full of healthy fats and superfoods, plus it tastes like a classic French mousse!
Chocolate Avocado Mousse
- Author: Sadie R
- Prep Time: 5
- Total Time: 5 minutes
Ingredients
- The meat of 3 avocados
- ½ cup cacao powder
- 6 Tbs raw honey or maple syrup
- ½ tsp vanilla extract
- ¼ tsp sea salt
- Raspberries and mint leaves, for garnishing
Instructions
- In a food processor, pulse the avocados until there are no chunks left.
- Pulse in the cacao, honey, vanilla and sea salt. Blend until smooth.
- Scoop the mousse into an airtight container and refrigerate overnight.
- Spoon mousse into small glass dessert dishes, top with raspberries and mint leaves, and serve.
