Nutella Fudge Balls

Nutella is basically the yummiest food ever… that is, if it was considered a food. Sadly, it’s filled with really un-food-like ingredients: refined sugar, palm oil, soy lecithin, and artificial vanilla flavor.

 

 

 

 

So, I set out to give Nutella a makeover, and I put it in the form of a protein bite!!! These little guys are packed with protein and fat, for a completely filling and delicious snack. Plus, they have a secret ingredient that you’d never guess from tasting them.

 

Try making these scrumptious bites with your family! They are super quick to whip up, and they’d be great for the holidays. Plus, they won’t leave you with a terrible sugar crash, like most treats. Instead, they’ll actually give you energy. Mind blown. Enjoy!

Nutella Fudge Balls

Vegan option*, paleo option**, primal, egg-free, raw


Ingredients

Scale

For the balls

  • 1 avocado’s meat (approx. ½ cup)
  • 3 scoops Chocolate-Coconut Primal Fuel (or chocolate protein powder of choice)
  • 2 Tbs coconut oil
  • ½ cup toasted hazelnuts
  • 2 Tbs cacao powder
  • 1 Tbs raw honey

For the coating

  • ½ cup toasted hazelnuts
  • ¼ cup dark chocolate
  • 1 tsp coconut oil

Instructions

  1. Place all the ingredients for the balls in your food processor and pulse until smooth. Scoop dough into a bowl and freeze for 30 minutes, so it can chill.
  2. Roll the dough into nine balls (or more if you make them smaller.) Place them on a plate lined with parchment paper.
  3. Roll the balls in the chopped hazelnuts, covering all sides. Now, place the plate in the freezer for 10 minutes.
  4. Melt the chocolate and mix in the coconut oil. Drizzle on top of the balls. Serve, and enjoy!

Notes

  • Leftover balls should be stored in the fridge in a sealed container.
  • *To make these vegan, simply sub pure maple syrup for the honey, and use a vegan protein powder in place of the Primal Fuel
  • **To make strict paleo, opt for a paleo-friendly protein powder without whey.

  2. Can you be more specific on “3 scoops” of protein powder? Different brands have different size scoops.

      “Three scoops” is intended for the brand of powder I used in this recipe. I think that’s about 2 Tbs worth of protein, 20 grams. But the amount doesn’t have to be exact. You can use the amount you want to, and it won’t really affect the recipe 🙂
