So, as you may have noticed from my various recipes and social media posts, I am in love with coconut. I love to use coconut products in my baking, such as coconut flour, coconut sugar, coconut milk, coconut oil, and coconut cream!
My new favorite kind of coconut is the young Thai variety. You can find them at your local supermarket. They look white on the outside (the green husk has been shaved off) and they are cut into a pointed shape at the top. The inside is full of the sweetest, most refreshing liquid ever: coconut water! But it’s nothing like the Zico coconut water, or those other bottled brands. It is much sweeter, and doesn’t have that bitter aftertaste. I swear- once you taste a raw young Thai coconut water, you’ll be hooked. But wait- there’s more! Not only are the coconuts filled with a delicious water, but they are also full of coconut meat! This is a thick, white flesh on the inside of the coconut, which is tasty to scrape out with a spoon and eat. It is so yummy, trust me.
I buy my young Thai coconuts at my local health food store for only $3.00 each, which is an amazing deal. Not only is the coconut water so much better (and healthier!) straight from the coconut, but it’s also much cheaper than buying bottled coconut water (plus you also get the coconut meat!). After I buy my coconuts at the store, I usually take them home and store them in my fridge. Then whenever I get a coco-craving, I just whip out my handy-dandy Coco Jack, and open my coconut!

- Coconuts are full of minerals, vitamins, and antioxidants!
- They are a great source of healthy fat.
- Young coconut water is one of the highest sources of electrolytes known to man.
- Coconut is delicious (personal opinion) 😉
